Today is Sankasthi and many of us are fasting in
order to appease Lord Ganpati.
But during fasting we generally avoid the usual
food and usually savor on items made from sago or sabudana, sweet potato or
devour on fruits. But we usually find the usual sabudana wada or kichadi or
sweet potato usal or kheer as boring or high in calories. So here is some
options made from big bananas called as Nendrabale bananas or they are commonly
known as chips bananas or mallu bananas.

During fasting we usually opt for dishes which
are sweet and light so that the spicy food doesn’t upset the acid balance of
empty stomach. These 3 recipes are easy to make, and is done in matter of half
15-20 min.
Stuffed banana (sweet)
Ingredients
Nendrabale bananas 2
Coconut gratings 1 cup
Gul or jaggery according to taste
Elachi powder
Dry fruits – chopped or powdered (optional)
Ghee – to shallow fry
- In a non-stick pan melt the jaggery on low flame.
- Once the jaggery has melted, add the coconut gratings and dry fruits and cook till the mixture becomes dry.
- Add the Elachi powder and allow the mixture to cool.
- De-skin the bananas and make 4 pieces with a slight slit on one side. Be careful as not to make a deep slit then we won’t be able to stuff the stuffing.
- Once the coconut mixture is cooled stuff the mixture in the slit bananas and shallow fry them till they are golden brown on all sides.

Ingredients
Nendrabale bananas 2
Coconut gratings 1 cup
Coriander leaves few
Green chillies 2
Ginger 1’
Jeera 1 teaspoon
Salt to taste
Pudina (mint) leaves – optional
Ghee for shallow fry
Coconut paste |
- Make a paste/ chutney of coconut, coriander, green chillies, ginger, jeera and salt.
- De-skin the bananas and make slit as done for above recipe.
- Stuff the coconut paste in the bananas and shallow fry them.

Caramelized Bananas
This recipe requires no grating or making paste
and is easy and ready in jiffy,
Ingredients
Nendrabale banana 2
Sugar 1 – 2 teaspoon
Dalchini (cinnamon) powder - to sprinkle
Ghee to shallow fry
- De-skin the bananas and cut into half. Cut around 1 cm thick slices.
- On a non-stick pan, smear some ghee and sprinkle some of the sugar.
- Place the banana slices on it. Sprinkle some more sugar and cinnamon powder on the slice and shallow fry them on both sides till golden brown.
- Serve hot with chilled ice-cream on top.
